My favorite is Ke-bobs.
Get all of your veggies cut and store is a ziplock with your marinade. Also bring scewers is a ziploc with water. (You have to soak the scewers so they don’t burn up on the grill.)
My favorite veggies are Mushrooms, zuchinni, yellow squach, peppers (all colors) onions, eggplant, and par-boiled red potatoes cut in half. Serve these up with grilled corn on the cob.
A good marinade is just plain italian dressing. Also, if you don’t want to mess with scewers, they make special pans for grilling veggies.Good Luck!

GRILLED VEGETABLES :
4 zucchini
2 eggplants
4 yellow zucchinis
olive oil
thyme, salt & pepper
In an aluminium foil, put all the vegetables that you would have sliced or diced,
the salt, pepper, thyme and olive oil,
close the foil but leave a little opening, cook on the barbecue.
You can eat it cold as an appetizer, or hot as a side dish. Very simple and very tasty.
In fact you can do the same proces with any vegetables.
Asparagus and Portobella or wild mushrooms are great like this.
TOMATOES PROVENCALES (fast & easy) :
Cut the tomatoes in half.
Put a touch of olive oil, salt, pepper and crushed garlic, shredded parsley and
bread crumb (the thin kind) on top of each pieces of tomatoes.
Put in the oven at 400° but careful that the tomatoes remain firm and don’t overcooked.

I take vegetables with me and pre cook some.I boil potaoes and corn on the cob.Drain and wrap in foil for the grill.I take and cut up Italian squash,yellow squash and red onion.Foil them up and put them in Gallon ziploc bags.When I cook the other foods I put them up on the grill and heat thru.The squash is easy and cooks quickly.The potatoes I use for breakfast also…
Stock up on different morning star brand meals. Example, Riblets, Chicken Patties, Veggie burgers, Veggie dogs, etc. There is also a vegetarian brand called Quorn. They make Naked Cutlets, you can season them anyway you like and grill them, they are pretty good.
Also you can do corn on the cob on the grill, it is so tasty!
Do a variety of veggies. Mushrooms, bell peppers, onions, tomatoes, etc. And grilled pineapple is delicious! =)
